Our fine tasting drinks

The Nivers range offers aromatic notes that reveal themselves gradually during the tasting, from the initial sip to the finish.

The structure, the balance of acidity-sweetness, as well as the persistence,

provide harmony with the dishes without overpowering them and deliver a unique sensory experience.

Each of the current three references has its own expression, its botanical signature.

Their common elements: botanicals, natural ingredients, fermentation, macerations, and high-quality extractions.

Blend: Japanese green teas grands crus, verjus, kombucha culture, raspberry leaf extractions, maté, mimosa, fucus.

Tea cultivars: Yabukita | Tea area: Oita, Japan

Color: pale yellow with green reflections

 

Profile: Herbal notes, fresh vegetal, cooked green vegetables, subtle hints of dried mango and tart plum. A iodized impression at the finish.

Lively, salivating, taut.

Possible pairings: grilled fish, sea bream ceviche, roasted scallops, vegetable dishes with citrus juice

 

Serve between 12°C and 14°C

Blend: Chinese white teas grands crus, verjus, kombucha culture, plant extractions (bitter orange tree), cedrat, bergamot.
Tea area: Fujian Mountain, China

Color: bright yellow

 

Profile: Roundness of white flowers (jasmine), balanced with citrus notes (bergamot, cedrat) bringing a beautiful acidity in the middle of the palate.

Flattering profile, floral persistence at the end of the tasting.

 

Possible pairings: Saint-Jacques carpaccio with passion yuzu sauce, roasted apricot crumble, wild strawberry.

 

Serve between 12°C and 14°C

Blend: Black and green teas Grands crus from Japan, verjus, kombucha culture, osmanthus flower extractions

Tea cultivars: Benifuuki, Yabukita | Tea area: Yame, Japan


Color: coppery yellow, amber highlights

 

Profile: Beautiful complexity, heady and comforting with roasted notes, cooked apricots, subtle leather, quince compote. Interesting mouthfeel for pairing.


Possible pairings: veal tenderloin, morel risotto, beef with chanterelles, aged goat cheese, blue cheese.

 

Serve between 14°C and 16°C
